Pumpkin Meatballs!

Okay the Pumpkin Mac & Cheese was amazing!!!!

I had a 1/2 a can of pumpkin left over so I decided to make Pumpkin Meatballs 🙂

I used ground beef and mixed in eggs, milk, pumpkin, salt, pepper, spices, panko bread crumbs and Parmesan cheese. I should have added onion and garlic but last time I cut up an onion, Scott and I were crying for hours (I was also being a little lazy).

A few nights ago I ate the pumpkin meatballs with penne pasta and butternut squash pasta sauce – delish!

I have also started frequenting the gym again and realize that I really miss spinning! Although my whole body was sore after my first day back, it felt good!

Right now I am in Memphis, TN and getting ready to board a plane back to Boston! Beautiful sunset!
